Perfect Halloween Dinner!

Last night my friend Karen came over for dinner and a Halloween movie. We watched Practical Magic, an old favorite of her son Dalton. I made Minestrone Soup and Crostini Bread. It is from the new Magnolia Table Volume 2 cookbook. Suffice it to say, Karen loved it as much as I do! She filled her bowl.... well, let's just say a few times!


I often make this soup for lunches and freeze half. Last night, I the part I usually freeze went home with my friend. I couldn't find the recipe online but did find her spinach tortellini soup here. I'm sure this is amazing as well. But, don't hesitate to buy the cookbook as it is well worth it. It is my bible now as CoVid drones on and we are cooking more at home.


I have made the french silk pie on that link too, but last night I made the Pumpkin Layer Cake with Cream Cheese Frosting from King Arthur Baking. I made this before and it disappeared virtually overnight. I did make the homemade caramel as recommended in the comments. Mine was a little runny, but still great.


Pair it all with a glass of wine for a perfect empty nest Halloween!
